COUPAGE
100% Albariño. This single-varietal wine is made from our own grapes, selected and harvested by hand on farms in Condado do Tea. Before vinification, part of the “flower must” is separated from another part of the must that has been cold macerated with the skin for 24 hours. In this way, a greater aromatic expression of the skin is achieved, without losing the fruity aromas of the must. Once this process is finished, fermentation takes place in stainless steel tanks, which, after 3 months of aging on lees, will conclude the production process.
Underwater maturation for 9 months at a depth of 24 meters on the Alicante coast of the Mediterranean Sea.
Tasting
On the nose: high intensity.
Floral and fruity aromas with a marked presence of lees. Stone and tropical fruits predominate.
On the palate: full-bodied and balanced, unctuous with a very well-integrated acidity, with fruity hints (apple and stone fruits) standing out. Great structure. With an intense fruity retronasal phase, which confirms the olfactory aspects. Its flavour is sweet, frank, smooth and fruity.

Our wines go through a process called “underwater maturation,” which has been standardized by us and registered along with all the elements that characterize it. Today, our process is completely confidential, and the only thing we can reveal is that no one else does anything like it.
