There are those who search for pearls at the bottom of the sea; we prefer to create them.
Locations
Our underwater winery is located in Cabo de las Huertas, approximately a mile and a half from the bay of Alicante. A strategic point where the Mediterranean’s water renewal currents converge and where there is a constant temperature of between 15 and 19°C all year round.
In this location, we store the wines inside our maturation silos, a structure developed and patented by ourselves that enhances the kinetic energy that the water currents exert on the wine, which is essential in the transformation process.

It reinforces this by creating artificial reefs that allow for an increase in marine biomass and the regeneration of posidonia meadows.
The Fund
In the seabed of Cabo de las Huertas, as well as on its shores, there are important concentrations of posidonia oceanica, a plant that forms one of the most diverse ecosystems in the entire Mediterranean in this enclave.
Our activity not only respects the seabed, our studies have shown that it also strengthens it by creating artificial reefs that allow for the increase of marine biomass and the regeneration of posidonia meadows.
We actively collaborate with the University of Alicante as part of our R&D&D policy, analysing from a scientific and rigorous perspective the underwater evolution of the flavours and structures of submerged wines, as well as our environmental impact.
A sea so given to dialogue throughout its history is a constant inspiration for the land-sea link that we propose.
Today, we continue to study the possibilities that the Mediterranean offers us and explore new locations that may meet the necessary conditions for the maturation of our wines.
